It sounds fancy but this super simple recipe takes just 5 minutes to make… I promise! Impress your family with this delicious winter crowd-pleaser.
I know people think salmon en croute is very complicated but honestly it’s really easy. I’ve shown the step-by-step instructions below, as demonstrated by my 9 year old, who made it for dinner the other night. If she can do it so can you!
Ingredients
⭐1 side salmon
⭐All Butter puff pastry
⭐Cream cheese
⭐Blitzed or chopped rocket and dill
⭐Lemon zest
⭐4 egg yolks
⭐Salt
Step 1
Cover the salmon with cream cheese.
Step 2
Sprinkle with blitzed (or chopped) rocket and dill, lemon zest and salt.
Step 3
Fold the pastry over to enclose the salmon. Cut any extra pastry off and seal the edges by pressing down with a fork. Cut lines to let steam release and paint a layer of egg yolk over the surface.
Step 4
It can be stored in the fridge for a few hours or cooked straight away. Bake at 190c for about 15 mins, or until golden. It will depend on the size of your salmon.
Step 5 While it’s in the oven make the sauce. Blitz 2 yolks in a jug with a handheld stick blender. Pour over 100g hot butter mixing well. Stir in 2 tbsp lemon juice. Pour over the salmon, serve with lemon wedges and sprinkle with dill or chives. Et voila!
